Slow Cooking Dinner: Barbecue Chicken Sandwiches

Continuing on my quest to come up with 25 dinners for the slow cooker that most of my family will eat. 

I am super slow to post this "recipe", if you can even call it that. I made this last month, and it is so easy and popular that it is definitely a keeper!

This is what I did:

  • Put 3 chicken breasts in the slow cooker
  • Added about a cup of barbecue sauce and stirred to coat
  • Set the slow cooker on low and cooked the chicken for 5 hours
When Rose and I got home, I shredded the chicken and let it cook on low for about 30 more  minutes to absorb the extra barbecue sauce. I served the shredded chicken on hamburger buns, with sliced American cheese and pickles for those that like them. Alas, I didn't take any pictures, but these were a major hit! The chicken is also great on top of rice; I served it that way one other night. 

That's 9 recipes down, 16 to go!
