Slow Cooking Dinner: Pumpkin Turkey Chili

It feels like ages since I did a slow cooker post - the holidays kind of interrupted my motivation to try new things in the kitchen - but I am still determined to come up with 25 slow cooker recipes that everyone (or at least most everyone) in the family will eat.

A recap of what we've tried so far:

1. Santa Fe chicken

2. Sloppy joes

3. Baked potato bar

4. Sweet potato & black bean burritos

Recently, I made pumpkin turkey chili in the slow cooker - and it was a hit! I had several cans of pumpkin sitting in the pantry, and it occurred to me that they could probably go into a chili or something. A quick google search turned up a recipe that was exactly what I was looking for.

 Excuse the messy-looking Crock Pot.

Some of the kids were a bit skeptical about pumpkin being in chili, but they all loved it. I didn't tell the husband the pumpkin was there until after he complimented it - he couldn't tell, he just knew it was different from our regular chili.  I followed this recipe pretty much exactly, except I used a can each of kidney, black, and white beans. We served this with sour cream and diced avocado... and it was wonderful on a cold night.  We'll definitely make this one again.

That's 5 recipes down, 20 to go.
