Continuing in my search for slow cooker recipes the whole family will like...
Earlier this week I made baked potatoes in my slow cooker. I have a dim memory of having done this before, but for whatever reason it was a one time thing, which is a shame because this is so easy to do. I looked at a couple of online "recipes", but didn't really follow one particular method. What I did was:
1. Wash the potatoes.
2. Wrap them in foil.
3. Pile them in the crockpot. I fit about 10 in there, but they were on the small side.
4. Cook them on low for 8 hours. Before we headed out for our afternoon I cut up some scallions (about the only thing I successfully grew in the garden this year!) and stuck them in the fridge.
When we got back from our activities, I cut up some broccoli, drizzled it with olive oil, and put it in the oven at 425F to roast for about 20 minutes while we tidied up and set out the baked potato bar.
For our potato bar, we had:
- Roasted broccoli
- Sour cream & Greek yogurt
- Bacon bits
- Shredded cheddar cheese
Everyone decorated their own to their tastes. These were a huge hit and definitely six thumbs up! The kids suggested that this would work well with slow cooker chili as a topping and we do have two slow cookers, so I may give that a try one night soon.
